Many diabetics spend a lot time working out what they can eat and cannot.
So sometimes they miss out on what they are able to eat.
Cooking instructor and food writer, Amy Riolo's mother, was a type 2 diabetic .
This meant that growing up she witnessed her mother cooking as well effects of diabetes .
Riolo has written a cookbook, The Mediterranean Diabetes Cookbook, which is all about flavours and fresh ingredients.
It emphasises olive, citrus juices and fresh produce.
It encourages reasonable portions of poultry and lean meat, as well as nuts, beans and legumes.
She not only covers Southern and Eastern Europe, but also the Middle East and North Africa.
She covers Tunisian turnovers, with tomato tuna and egg, delicious soups, chicken and fish dishes, as well as vegetarian options.
As breads and flour products can prove to be problematic for diabetics, Riolo recommends the use of filo dough in most recipes.
